Chicken Breast – Keto Chicken Recipe Author: Anna Marie Ingredients 4 chicken breasts, boneless, skinless, skinned and cut into strips 2 large potatoes, peeled and cut in half lengthwise and sliced 1/2 cup chopped celery 1/4 cup chopped onion 1/8 teaspoon salt and black pepper 1/3 cup chopped garlic 1/5 cup chopped green onions 1/1 cup chopped tomatoes, quartered 2 tablespoons butter, softened and cut on a grater 1/6 teaspoon cumin 1/16 teaspoon dried oregano 1/32 teaspoon black pepper, plus more for seasoning Instructions Cut chicken into 2 inch pieces.
Heat a large nonstick skillet over medium-high heat.
Add onion and saute for about 5 minutes until translucent.
Add garlic and sauté for another 3 minutes.
Add the chopped tomatoes and sauter for about 2 minutes.
Pour in butter and season with cumin, oreganon, black pepper and salt.
Saute for another 1 minute.
Add tomatoes, potatoes and green onions and continue sauteing for another minute or so.
Add chopped tomatoes in, saute and continue to cook for about 10 minutes.
You should have a nice chicken breast.
Turn the heat up to medium-low.
Add butter and stir to coat.
Add potatoes, onion, celery, diced tomatoes and green onion.
Cook until the onions are translucent and potatoes are slightly browned on top, about 5-7 minutes.
Season with salt and pepper to taste.
