Blueberry muffins are an easy way to start the summer, but they’re perfect for those times when you need to take a break from the heat and humidity.
When you’re tired, lazy, and hungry, a good blueberry muffinte can be just the thing to keep you from getting too full and to keep your appetite satisfied.
I’m a big fan of these muffins.
They’re so easy to make, you can even eat them cold and enjoy a warm cup of tea before bed.
Blueberry muffina recipe (serves 8-10)makes 8 muffinsIngredients: 2 cups all-purpose flour (1 cup sugar, 1 cup baking powder) 1 cup water (1 1/2 teaspoons salt) 2 tablespoons (1/2 teaspoon) baking soda 1/4 cup milk 1 teaspoon vanilla extract (or other flavor)Directions: 1.
Mix the flour, water, baking powder, salt, and milk in a bowl and set aside.
Heat the oven to 375 degrees F. 3.
In a large bowl, whisk together the sugar, vanilla, and 1/4 teaspoon salt.
Using your fingertips, mix the dry ingredients into the wet ingredients, and stir until well combined.
Fill each muffin cup 1/3 full with the batter.
Transfer muffins to a baking sheet lined with parchment paper and bake for 8 to 10 minutes, or until the top is lightly browned.
Allow muffins for 10 minutes before removing from the oven and serving.
Cool on the baking sheet before slicing. 9. Enjoy!
