Lentil Soup Recipe: What is it?
Ingredients 2 large carrots, peeled and cut into thin strips 2 medium onions, chopped 2 cloves garlic, minced 1 cup chicken stock 2 cups water 1 cup red lentils, rinsed and drained 1/4 cup tomato paste 1 cup onion powder 1/2 cup chili powder 1 tsp coriander powder 2 tsp salt 1 tsp black pepper 1/3 cup cilantro, chopped 1/8 tsp pepper 1 tsp paprika 1 tsp salt and pepper 3 cups shredded mozzarella cheese Directions Boil the carrots and onions in water in a large pot for 20 minutes, then drain.
Heat the stock in a small saucepan over medium heat until simmering.
Add the carrots, onions and garlic and saute until soft.
Add in the chicken stock, water, tomato paste, onion powder, corianders powder, chili powder, salt, pepper and cilantro.
Cook for about 30 seconds to soften the mixture.
Add drained lentils and tomato paste.
Add broth and stir well.
Add cilantro and season with salt and black pepper.
Add a little more water if needed.
Serve with cilantro leaves.
Recipe Notes This recipe makes about 10 servings.
To make your own, simply use a food processor and pulse the ingredients until they are well blended.
