In a small saucepan, combine the water, sugar, and vanilla.
Cook over low heat for 5 minutes, stirring constantly until the sugar dissolves.
Pour the gelatin mixture into the ice cream mixture, stirring well.
Pour into a container.
Cover with plastic wrap and refrigerate until set, at least 2 hours.
When ready to use, make the jello shot.
